I get REALLY excited when I find a recipe that’s easy, healthy, and cheap enough to put on my more-or-less permanent rotation of recipes. This one instantly made the cut, from the first time I tried it last month. My good mama friend shared it with me, and I will thank her forever and make it for years to come. The salsa chicken is full of flavor, while the delicious cilantro-lime rice is just the perfect amount of “fancy” (note: crazy-easy fancy) to make me feel proud of my cooking efforts.
Remember when I said we would move out of my parents’ house as soon as we got back from Hawaii? Oh woops, we’re still here! SORRY, MOM! We move into our new house in about a week, and for a variety of reasons, it made the most sense to just stay here until then. So, I figured the LEAST I could do was make dinner for everyone the other night, even if only a casual crock-pot creation. The feast was a huge hit with everyone, and easily served four adults and one 18-month-old.

What You’ll Need:
- 3 chicken breasts (Trader Joe’s Organic Free Range Chicken, Boneless Skinless Breasts)
- 2 jars Trader Joe’s Salsa Autentica
- 1 can Trader Joe’s Whole Kernel Corn
- 1 can Trader Joe’s Black Beans
- 1 bag Trader Joe’s Brown Rice (frozen section, three bags sold in one box)
- 1 bag Trader Joe’s Organic Jasmine Rice (frozen section, three bags sold in one box)
- Trader Joe’s Organic Cilantro
- 1 lime
What You’ll Do:
- Pull out the crock pot.
- Lay three chicken breasts in the bottom.
- Pour both jars of salsa on top, drowning the chicken breasts.
- Cook on low for 6 hours.
- When the crock pot timer goes off, it’s time to dig in and shred! Pull the chicken apart into shredded pieces.
- Once the chicken is sufficiently shredded, drain the can of corn and the can of beans. Add both to the crock pot and stir.
- Cook the well-mixed chicken, corn and beans on high for another 10–20 minutes.
- During that time, let’s make the Cilantro-Lime Rice! Microwave both bags of rice (three minutes each).
- Chop up entire package of cilantro.
- When the rice is done heating, pour both bags into a bowl and stir until mixed.
- Add cilantro.
- Squeeze in juice of one lime.
- Stir.
- Serve up the chicken mixture side-by-side with your fancy rice…
- ENJOY!
